Ingredients

  • 3 duck breasts

Instructions

  • Preheat oven to 400F/200C. Place cast iron pan in oven.
  • Allow duck breasts to sit at room temperature for at least 15 minutes.
  • Pat breasts dry and season both sides with salt and pepper to taste.
  • Place preheated cast iron pan over medium heat.
  • Put duck breasts skin-side down in pan and sear for 8-10 minutes, without moving them around.
  • Remove rendered fat from pan and reserve.
  • Flip breasts over when skin is brown and crisp and place in oven.
  • Cook another 8-10 minutes.
  • Remove breasts from the oven, place on a board, and cover loosely with aluminum foil. Allow duck to sit for at least 5 minutes.
  • Slice thinly and serve.

Notes

Reserve duck fat to use with potatoes or other vegetables.

  1. Thank you! I sauteed them in the cast-iron used for the duck. At the last moment, I added the greens and let them wilt slightly.
