Dan Bing (Taiwanese Rolled Egg Pancake)
This is one of my absolute favorite breakfasts! I first had this on my honeymoon trip to Taipei. It is absolutely delicious!

Servings: 3 serving
Ingredients
- 4 eggs
- 1 scallion
- to taste salt
- canola oil
- hoisin sauce
Instructions
- Beat the four eggs for a few seconds until well mixed.
- Add sliced scallion and salt to the egg.
- Place a frying pan over medium heat.
- Pour approximately 1/5th of the egg mixture into the pan (roughly the size of one pancake). Immediately form the egg into a round-shape with your chopsticks.
- Place one pancake on top of the egg.
- Flip the egg pancake over and continue cooking.
- When the egg is cooked, roll up the pancake and place seam-side down for a few seconds to seal.
- Remove to a plate and repeat for the remaining pancakes.
- Slice into bite-sized pieces and serve with hoisin or oyster sauce.
