Baked Soy-Garlic Chicken with Sauteed Mushrooms and Bok Choy

This dish was frantically thrown together tonight, but I’m quite impressed with how it turned out! The chicken was perfectly juicy and the vegetables were light but flavorful.

Instructions
  1. Combine chicken wings, soy sauce, garlic, sesame oil, and green onion in a bowl. Mix to coat.
  2. Cover with plastic wrap and let the meat marinate at least 30 minutes. 
  3. Preheat the oven to 375F/190C.
  4. Place wings on a lined baking sheet and bake until crisp, about 1 hour.
  5. Blanch stems of bok choy for at least 1 minute. 
  6. Pour olive oil in a medium-sized saute pan or wok over medium heat.
  7. Add sliced mushrooms and saute until tender.
  8. Add bok choy and cook for about 2-3 minutes, or until they are softened but still have a slight bite.
  9. Add a splash of soy sauce to season. 
  10. When the chicken is done, sprinkle with toasted sesame seeds.
Recipe Notes

You want to add enough soy sauce so you can thoroughly coat the chicken.
