Dan Bing (Taiwanese Rolled Egg Pancake)

This is one of my absolute favorite breakfasts! I first had this on my honeymoon trip to Taipei. It is absolutely delicious!

  • 4 eggs
  • 1 scallion
  • to taste salt
  • canola oil
  • hoisin sauce


  • Beat the four eggs for a few seconds until well mixed.
  • Add sliced scallion and salt to the egg.
  • Place a frying pan over medium heat.
  • Pour approximately 1/5th of the egg mixture into the pan (roughly the size of one pancake). Immediately form the egg into a round-shape with your chopsticks.
  • Place one pancake on top of the egg.
  • Flip the egg pancake over and continue cooking.
  • When the egg is cooked, roll up the pancake and place seam-side down for a few seconds to seal.
  • Remove to a plate and repeat for the remaining pancakes.
  • Slice into bite-sized pieces and serve with hoisin or oyster sauce.
